Recipe : Baked Chicken Parmesan

Notes : We don't use jarred marinara sauce, we make our own every time. A can of diced tomatoes, a small can of tomato sauce, 1/4 of an onion, 1-2 cloves garlic, some black pepper and some italian seasoning blend. Mixed and simmered all those ingredients in a pot on the stove while the chicken baked in the oven. Once the chicken was done, we just assembled it on the plate -- didn't take time to bake the cheese and it worked out just fine. We served it over spaghetti and had broccoli on the side.
Review : We both really liked this one. Will definitely make it again -- it was simple, tasty and healthy. WIN. :) Will definitely be trying more of the recipes on that site!
