Nana's Chicken n' Dumplings
From the Kitchen of Ruth Stewart (Brian's Grandma)
1 whole chicken
1 bunch celery, cleaned and chopped
1 onion, chopped
Salt & black pepper, to taste
Boil chicken until done. Note: Brian will do this step by putting the chicken in the crock pot on low all day! Remove bones, skin and discard. Put chicken meat back in pot with celery onions, salt and pepper. Cook until celery is done and soup comes to a full, rolling boil. Add dumplings and simmer 5-10 minutes until done.
2 eggs, beaten
1 cup water
3 cups flour
2 tsp. salt
6 tsp. oil
Mix together ingredients and roll dough out on well floured surface, 1/8" thick. Cut into strips or use round cookie cutter. Put a few pieces into soup at a time. Push gently into soup and allow to cook completely.
