Recipe #8: Blueberry Oatmeal Pecan Muffins

Blueberry Oatmeal Pecan Muffins

1 1/3 cups bread flour
3/4 rolled oats
1/3 cup sugar
2 tsp baking powder
1/4 tsp salt
1 egg, beaten
3/4 cup milk
1/4 cup cooking oil (I used a blend we have of canola, soy & olive oils)
1 cup blueberries
1/4 cup pecans

Line a muffin tin with muffin liners and heat the oven to 400. Mix all the dry ingredients in one bowl. In a separate bowl, beat the egg, then add the milk and oil. Stir to combine, then mix with the dry ingredients. Add the blueberries and pecans. Stir until just combined. The batter will be really lumpy. Spoon into muffin pan, filling about 2/3 full. Bake at 400 for 20 minutes or until golden brown. Cool in muffin pan on wire rack at least 5 minutes before serving. Makes one dozen muffins.
